I don't want to you use any force on this incase I break it its an AMD Radeon HD 7800 GPU and I've unscrewed the 2 screws connecting it to the back plate, but im really confused as to what else needs unscrewed or levers pulled etc. I've heard some GPU's have levers but I can't find any.

Once the attachment hardware is removed (screws, posts, springs, etc), then gently twist a little bit back and forth to get the thermal paste to lose adhesion. You will need new thermal paste. Check several videos beforehand. YouTube is very helpful. There may also be thermal pads - these should be kept intact as they may be critical to the spacing.
