In building my system, I currently have two options when it comes to sound. My first is a Soublaster LIVE! 5.1 16bit, the second is the stock 6 channel audio that comes on my IS7 motherboard.... Which would I be happier with as a gamer and just 2.1 speaker setup?

5.1 is six channels--but one (the subwoofer) is only 20-120 Hz or so, not fullrange. With cheap speakers you are not likly to hear the diference, but with good ears and speakers you may be better of with a sound card(for less noise, better frequence responce & more...).
