can someone please tell me how to play ogm files on an ipod video?

Convert them to a QuickTime video file or use something like iPodLinux (you lose your warranty by doing the latter).

how can i retain the subtitles?

Maybe using a program like virtualdub lets you insert the subtitles in the video file but I don't know for sure. Try asking that question on more multimedia oriented forums.
