Moving My Documents

Im currently booting of a small hardrive (40GB). I have a larger one, but to cut along story short I can't boot off it. I would like to how to move my documents from the smaller to the bigger as the smaller is getting a bit full...

In ascending order of complexity -

1.Hook the large drive up as a slave to the small drive,then copy over whatever.

2.Image the small drive on to the big drive,using Norton Ghost,Acronis,Paragon etc.
and make it bootable.

3.Reinstall Windows on big drive,with small drive as slave,then copy whatever
