Yeah it should work barring hardware failure. The convention is to use the single drive for the os, and raid0 the apps. This way you can still boot if the raid array dies. People who want to raid the os should know this: most of the os will always be in ram, so raid0 won't help much as ram is far faster than disk access. I would also have pagefiles set on both the raid array and the os disk, both equal in size. This should increase performance.
