Are you talking about live music? If so I use Neuendo, its the best program I have ever seen. Although it is not cheap to buy.

ive got a few reccomendations. Sony Acid 6.0 is a very good professional program with midi embedded. however looking for musical notes etc. to edit use Sibelius which actually converts music from audio files into notes.
