    Have you checked to make sure subtitles were set to off on your iPod?

    Settings -> Subtitles Off
    also might try
    Settings -> Captions Off

    If you watch them on your PC with VLC are you able to turn them off?

    Video -> Subtitles Track -> Disable

    If you can't turn them off there, it has to be a setting with whatever you are using to rip the DVDs.

    It has to be a setting in the ripping program or they are hardcoded in the dvd itself.
