The biggest indicator is how well your dog moves and how much its level of activity increases. The better your dog's joints feel, the more they are going to move them. Dogs that laid around most of the time will begin to walk more, perhaps even start running and playing. Just watch your dog and see how their level of activity changes and how easily it gets around. You will be able to tell when they're feeling better.
