Wifi Randomly Gets Really Slow

I'm a console gamer (xb1) and I'm forced to use Wi-Fi at the moment due to my living arrangements. Before I attempted to jump online, I checked my internet speeds when connected wirelessly. Everything looked fantastic. However, I'm noticing there are brief periods where my internet access drops or drastically slows down.

For example, ill be in a game with a smooth connection and then I'll suddenly get 30 seconds of lag. It sometimes boots me out of games. It's not just on my Xbox either. I was in Discord last night and I could hear my friend's voices start to lag and then I got kicked out of Discord.

I bought a Wi-Fi extender from Eero that sits 10 feet from my room. The wall in my room is brick. There are 2 other gamers in the house but this occurs even when they're not home. It happens more frequently when I try to stream.

What are my options to keep this from happening?
 
Can you change settings in the router? If so, change the MTU to 1492 which will stop packet reassembly.

The more likely issue however, is the game server itself being overloaded.
