    Backing up is very easy with a control panel, and even without one.

    Just backup your databases, and any other important information on the server side, and then upgrade. If you have cPanel or others on your system do a full backup, and it will take care of it all for you.

    I would recommend you update your databases as soon as they are released. Your risk being hacked or vulnerabilities being exploited otherwise.
