OK, I understand that in order to get my c: drive as a single disk SATA drive I have to "F6" the ICH10R drivers during install. No problem there.
However, I've never tried this - what will be the effect on my other disks attached to that MB controller when it goes from IDE compatible/enhanced to SATA? Can they have drivers changed after the fact? Will they become wiped or unreadable?
I have a ton of stuff on them. I can move the stuff, but I'd rather not if I can just install the drivers. But I don't want the disks wiped before I realize what has happened.

Why? Set up the new computer with a "spare" hard drive. Then after the OS is up and running properly, attach the old C drive as a second drive and copy the important files to the new C drive
