I've got dual, matching ATA drives, but one of them is currently the boot drive and it also contains all of my important data. I'd like to set up a RAID array so that everything is "backed up" on the fly (to the second drive). From what I've read, it appears that I may have to reformat both drives. Can someone confirm if this is true?

Ideally I'd like to keep my C drive as it is in this procedure. Can anyone share a bit of experience on this?

the answer to that has a lot to do with your drive controller, refer to the manufacturer's instructions. for performance reasons i wouldn't put two ATA drives in a raid array on the same channel/cable.
