What do you intend to do with that server?

Serve files, printers, web, database, mail, desktop, instant messaging, shell acounts, internet connections?

And virtually any Linux can do any of these things. So just look up any of our "what's the best Linux distro" threads and make your pick.

OpenSuSE, (K)Ubuntu, Mandriva, Fedora are user-friendly and any of these will do just fine. Just make sure you get the latest version.
