dual OS

I Tryed to load winXP over Win server 2000 some how I ended up with both OS. it gives me the uption to run either OS on star-up
how did that happen and how do i get rid of win2000 server???

On what harddisk and/or partition is Win2000?
On what harddisk and/or partition is XP?

If you are sure you did it over it then I bet your boot.ini isn't set up correctly. What happens if you select 2k? Does it boot 2k or XP? If it boots XP then nothing to worry about, just remove that part from your boot.ini. Or set the default to XP and timeout to 0.
