Having been on 1GBPS fiber for a little while now, none of my devices yet have anything faster than gigabit ethernet, so for most it would be wasted. Even then, I have yet to download anything that saturated my bandwidth outside of P2P, as servers will throttle connections to ensure maximum number of concurrent connections- most places I see 350MBPS on a good day. you'd really need like 5 people in your house downloading big files at once to utilize this...
Also, 1.) yes unencrypted DNS is a privacy concern and 2.) yes it is alleviated by recent uptake in DNS over TLS or DNS over HTTPS or VPNs (though really, youre just giving your info to the VPN instead of the ISP unless you're using encrypted DNS there too)
In reality, the amount of resources and shady legality regarding dumping all your DNS queries into profiles matched to your name makes it not worth the risk to a company like Google. Well, thats what I like to pretend anyway. They still have less info about me than someone whos using an Android phone with google services (aka most of the population).
Finally, 3.) Google fiber has 0 added fees and comes with a free TB of cloud storage. $70 a month for 1GBPS and 1TB cloud. thats all. No legal fees or taxes. You can encrypt the data you put there too if you want. I did it for a while and got tired of spending my entire life worried that google would one day publicly cancel me for things I said when I was a teenager online.
