We have moved into a very large home and we are currently using a wireless G setup. The signal is anemic at best and I was thinking of going to an Ethernet. The problem is that we do not want to share files and to have privacy between the PC's. One is a MAC and the other is a Windows based system. Can this be done?

Which brand did you buy for wireless G. Even though dlink Xtreme N can be use G is pretty strong and can Dlink DIR-655. Depending on the size of your house if it's more than 1,400 sq then you'll need to get a wireless access point only if the DIR-655 can't cover the entire house.
 
sure; use the router and wire all system for Internet access.

to inhibit one system from accessing the other's data, use the firewall.

make sure you clear the File/Print sharing box on all systems.
