Can someone tell me where the setting is to delete all messages from server when exiting the program?

Are you talking about Outlook 2003?
Go to Tools, Account Settings, Advanced. Select "Remove from Server"...

Did you get things set the way you needed? I use Outlook 2007, but it should work the same. Good luck
