Come now. You not having a problem with the writing doesn't mean that the writing is good. There are things that are just straight up bad about it - though it's not as catastrophic as some are making it out to be.
Tyrion has become a total sap, whereas he was the most cunning and ingenious character on the show for 6 seasons. Neither he nor Varys realised that staying in a Crypt was a bad idea when the-bloke-who-raises-the-dead is coming?
Why has Bran's storyline about being a Warg been totally abandoned, what was the point in that? Why is the 'three-eyed raven' in any way important, other than as a secondary piece of evidence as to Jon's parentage? Why did the Night King care about the Three-eyed Raven? Why is Tyrion constantly blind-sided by exactly the kind of things he manoeuvred through in earlier seasons? How was Cersei not 'showing' when she was meant to be many months pregnant? How did (in S7) Gendry make it from the Ice Pass, back to the wall, get a message to Dragonstone, and Daenerys flew up past the wall in less than a frigging day?
The "hero armour" in this season is ridiculous. Jon Snow hides behind a brick wall and dragon flames aimed at him just waft gently past. But Drogon is able to blow up entire streets with a single breath?
The Night King, this emotionless, calculating being, decides to stand in front of Bran for 5 seconds, smirking, allowing time for Arya to somehow pop out of the shadows unnoticed - when in the same episode the Wights heard blood dripping on the floor - even though Bran was encircled by the dead. Where did Arya come from?
Similarly, the shots in the Battle of Winterfell, the tactical decisions and the immortality of the main characters all just felt ridiculous.
Episode 5 was probably the best of the season so far, but cinematography aside it would have been an average episode for an earlier season - it's just that the bar has been set really low this year, sadly.
Your attempt to write off criticism because it's " a FANTASY series of all things" rings a bit hollow when the reason this FANTASY show is so popular is because it was fantastically well written as a political drama with a fantastical backdrop. It's never just been "shiny hero defeats ugly orc" like so much fantasy.
There have been some brilliant moments in Season 8, but it really isn't of the calibre of the earlier seasons. In Seasons 1-6 the shocking moments felt like the twists and turns of a world whose unpredictability could be brutal. In seasons 7 and 8 the shocking moments feel like hatchet jobs.
