  1. Does anyone of software that will allow me to quickly go from using 1 monitor to 2 and back to 1? I need to use 1 for gaming and would like to utilize a second for programming.

Do you mean run multiple (virtual) desktops, or physical displays?

I have 2 physical monitors, but I only want to use 1 when I play games.

You shouldn't need any software for that. I've always found any game I play just does so on the primary display, leaving the 2nd on the desktop.

Running your games in windowed mode at the native resolution will help you move between them without causing games to crash when navigating away from them.

I see. I thought this would be a performance issue for my GPU, but it runs well!

    Try experimenting with Win+P hotkey.

If I remember correctly that only works for Windows 7. For some reason, I'm thinking it's a printing shortcut for Vista and XP.

What operating system are we referring too?

Do you have an AMD or Nvidia graphics card? For AMD cards you can save presets in CCC and assign hotkeys to them. Not sure about Nvidia though.
