Accessing Files Inconsistency iPhone/Window$

Hello.
I am using Win11. My friend has iphone 13 mini device mobile something.
I can not find files on the device correctly.
I hooked it into my desktop. Took awhile to get it to see the mobile. I got access to "internal storage" which only showed, assumingly photo folders. They were titled by YYYYMMDD.
On Win, I found folders from yesterday. There was an MP4 video she downloaded the other day from a friend on her son's wrestling match. I watched it on my desktop.
The problem (or one because am sure there are more), is that I can not find these files on her mobile. I go to Finder, tappy tap tap the "search iphone" or whatever, and I put in 2025 (the name of a hundred folders and pictures), the name if the wrestling video, or even MP4, and it find nothing. Then as we go in, can not find a lot files (music, photos, videos, documents) on her device as NONE shows up in Finder. But on Window$, at least for photos and videos (so far, not looked for them all), we can access.
So if Finder is a useless piece of trash, how do we gain access to ALL files on this mobile thing? A nice, regular, file explorer type way (without downloading more garbage on this thing) to see EVERYTHING that needs to be seen in one spot? Even in that photos program, can not find pictures from yesterday, or that MP4.
There is no itunes program on this device, nor should it be needed to accomplish the task.
I know very little on these Apple things, as they so complicated and I always avoided them. But, for her mobile, I need to find some answers.
I do not have access to this device now, and might be another few days, so any suggestions I will try and update when possible.
