You'll have to look at the target consumer. You're categorized as the "high-end" consumer. That was what the 8800 series was catering for.
They do release "mid-end" consumer products later than high-end ones. Not sure about graphics cards, I can't remember a new generation of graphics cards that was as much as the Geforce 8 series. Thanks to DirectX10. Definately not the norm for CPU, for reasons which should be apparent to you now.
