Backup Mac emails

I guess this is the right place to ask this out. I have recently got a new job. its my very first day and my boss hands me the tedious job of backing up all emails in a MAC. there are 3 mail accounts. overall stacking somewhere around 90000+ mails.one of them pushes the mails directly to an offline location. that would be done somehow. what about the online ones? any help ASAP?

What email client on the user systems is being used - - the default or something else?

Is that a remote office with users? If not, that was the prior admins idea of email backup
what about the online ones?
hmm; there's lots to discover on this one.
  1. online where, the email server itself?
  2. are your clients using IMAP, POP3 or a mix of both.
  3. does the company run any form of ADS(Active Directory Service) to manage client systems
