Mobo Recommendation help

I'm new here and I could do with some help. Can anyone suggest a good motherboard for me?
I plan on an AMD Ryzen 7 5800x platform. I also only require 2 x M.2 Gen4 slots. It's all I'll ever use. There are plenty of good boards with 1 slot and 3 slots but none that I could find with only 2 slots. If only the Gigabyte Aurous Ultra came with 2 x M.2 Gen 4.
I don't really want to be pushing £300 for a motherboard and my reasoning is the removal of an unnecessary 3rd M.2 slot will drop the price. Or at least be money I could have spent elsewhere on the board further improving it's quality.
Please can anyone help?
Many Thanks Chris.

You star. Very much appreciated info. By 'good' I meant not budget :) ,anything above that.
Just for your info I seem to be settling on an MSI X570 Tomahawk. Seems to tick the boxes for me.
Once again, thanks for swift, and rather in depth response.

I think the MSI X570 Tomahawk is a good choice. You should check out Buildzoid's channel on YouTube. That man has incredible, deep intricate knowledge of motherboards.
